I've never been a huge fan of enchilada sauce, but they seem easy enough. Maybe I can tweak the recipe and just use salsa or something instead. :)

YUM, those look really good! I used store bought tortillas this week for a quesadilla and they're SO much better fresh so I think I'm going to have to go back to doing it that way next time. I'm making tacos for my Cinco de Mayo birthday party - maybe I'll try these too!
